Jean-Louis Chavy

The Domaine Jean-Louis Chavy is an ancient estate whose origins date back to the early 19th century. The tradition of viticulture has been passed down through the centuries from generation to generation up to the present day. The domaine has managed to maintain a family dimension and continues to produce classic wines with a traditional face, in one of the most prestigious terroirs of the Côte de Beaune. The area of Puligny-Montrachet, along with that of Chassagne-Montrachet, is recognized as the home of some of the world's most famous whites for elegance, intensity, aromatic complexity, and longevity. The territory of the Appellation, in fact, is cultivated for over 95% with Chardonnay and for the remaining 5% with Pinot Noir.

To confirm the extraordinary qualitative level of the terroir, the municipality of Puligny-Montrachet hosts 17 Climat classified as Premier Cru and four legendary Grand Cru: Chevalier-Montrachet, Montrachet, Bâtard-Montrachet, and Bienvenues-Bâtard-Montrachet. The vineyards extend at an altitude between 230 and 320 meters above sea level, with an exposure facing east and southeast. The sunny, yet cool and breezy climate allows Chardonnay to reach optimal ripening levels. The soils are predominantly calcareous, with shallow calcareous-clay marls, which rest on a subsoil composed of a calcareous mother rock.

The Chavy family owns 6.5 hectares of vineyards, distributed in various parcels, with vines that have an average age between 40 and 50 years and are capable of producing grapes of excellent quality. The vines are meticulously cared for and the harvests are carried out manually, selecting only the best bunches directly in the vineyard and then on sorting tables, before proceeding to vinification. At the end of the soft pressing, according to the oldest traditions of the territory, fermentation takes place directly in French oak barriques, with only a small percentage of new wood. Before proceeding to bottling, the wine matures for about a year in wood. The wines are particularly appreciated by enthusiasts in search of a savoir-faire and a still artisanal care.
